This one is a spicy recipe based on a recipe from the Punjab state of India. Fresh aubergines which are cooked in a semi dry gravy flavoured with ginger, garlic, cumin seeds, white pepper and red chilli powder . To finish with the dish has fresh coriander mixed at the end, with our aromatic garam masala!
